is there any type of software which enables me to do all my editing of my akai
mcp2000xl on my computer?

dont mind the tiny screen but if software is available....bonus

if you just want to edit samples, any wave editor will do as the 2000 will import standard WAV files.

you could also try this... although it seems to lack "instant gratification" factor since you have to save your changes to floppy and then load it into the mpc.
