I have a 2 year old. Are you serious about getting a keyboard for a 1 year old? If so, I'd say keep it cheap as hell. It will get broken! Or at least removed from a usuable state.
Baby may not want a keyboard in 2 months, go CHEAP! I'm talkin' $30 casio. If she shows interest get her more, with time you'll know if it's worth investing. (And she'll be old enough to use it responsibly). Let her play with your gear when you're there, that'll help.
All that said, I've noticed drums are the best way to get kids into making music! That and playing good music around them ALL the time (but not SO LOUD).
Like XOXOS says, don't use headphones on a little kid. They don't like 'em on their head (as a rule) and they will cause nearfield hearing problems in growing ears.
